To make this Daiginjo, we squeeze 35% polish rate Yamadanishiki rice from Ehime Prefecture, in a special method called fukurozuri. This sake is the best in our brewery.

To produce this great sake in our brewery, we use Yamadanishiki rice which is carefully produced by local contracted farmers in Ehime Prefecture. We polish it to 35% polish rate, ferment it carefully at a low temperature, and squeeze it using a special method known as fukurozuri. Please enjoy the pure flavor and the sharp aftertaste of this mellow ginjo sake.
